I know it’s Friday, but better late than never, right? As I mentioned previously, my goal is to find an affordable ingredient to incorporate into as many meals as possible each week. This week’s big winner, and our first flavor of the week is La Banderita corn tortillas.
You’ve seen these buggers at the grocery store, and you may have paid them no mind in the past. Let me tell you why these are a good buy.
- Cost. I got 80 of these delicious ground corn patties for only $2.80. That comes out to a whopping 3.5 cents each. This will come into play later.
- Flexibility. You can make literally almost anything with these guys. Replace your bread to turn your sandwich into a taco. I think I’ve had about 15 egg tacos for breakfast this week. And guess what? Those 15 tacos only cost me 52.5 cents worth of tortillas.
- Flavor. Now, I’ve not always been a corn tortilla kinda gal. They were always a little grainy for my taste, and nothing makes me sadder than a broken taco – which these are prone to when cold. GAMECHANGER TIME! Microwave these little guys. Like, 10 seconds in the microwave and it changes the entire experience. Just trust me on this one.
So there you have it. The shelf life on these bad boys is pretty long if you refrigerate them. That being said, I’m giving myself about a week and a half to go through this package. If I don’t, they will end up in the abyss that is the back of my fridge and you can’t save money if you let your food spoil!
