As you can start to see by now, I’m a huge fan of single dish meals. It saves time and cleanup. With two kids and a hungry husband, this is important.This meal is a favorite of my whole house, and it’s pretty healthy too.

Garlic Chicken and Potato Bake
Single dish, comfort food that's easy to put together. Serve with a salad or vegetable for a delicious, well rounded meal.
- 2 boneless skinless chicken breasts
- 4 Russet potatoes
- 1/2 onion
- 1 tbsp minced garlic
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1/2 cup shredded cheese
- chopped parsley
Preheat oven to 425.
Prepare 3QT baking dish with non stick spray or oil.
Peel and chop 4 Russet potatoes into 1/2 to 1 inch pieces.
Chop 1/2 onion into small pieces.
Combine potatoes, onions, garlic, salt, pepper, garlic powder, and oil. I like to put all the ingredients into a gallon sized Ziploc bag and shake to evenly coat everything.
Put potato and onion mix into prepared baking dish and spread evenly.
Bake in oven for 15 minutes.
Remove dish from oven. Add two chicken breasts on top of potatoes.
If desired, brush chicken with oil and add additional seasoning.
Return dish to oven and bake for additional 25 minutes, until chicken is cooked thoroughly and potatoes have browned.
Sprinkle top of dish with cheese.
Return to oven until cheese is melted to desired level.
Remove from oven, top with parsley.
Let cool for 5 minutes before serving.
Any type of potato can be used in this dish, and peeling is optional. I used a shredded Mexican blend cheese because it is what I had on hand, but different types of cheese would be delicious as well.
I like to broil for a few minutes once the cheese has been added because I like my cheese browned.
