I cannot speak enough praises for this dish! If you have a picky eater who won’t come close to most greens, give this a try. It is warm and creamy and super cheesy. Every time I have served this, everyone has gone back for seconds. It’s that good, and it is super easy!
As always, I leave the decision as to what cheese to use up to you. Pictured is my batch using a colby jack and cheddar mix. I used zucchini and onion from my garden, so for me this was extra affordable. As promised, I will include fair market prices to give an accurate cost reflection for you, given that zucchini is my flavor of the week. You could easily make this a single dish meal as is, or add a protein in. This recipe is low carb and fits into a keto diet as well. Give it a try!

Cheesy Zucchini Au Gratin
A cheesy, creamy dish that will please even the pickiest eaters in your life.
- 2 small to medium zucchini
- 1 onion
- 1 1/2 cups shredded cheese
- 2 tbsp butter
- 1/2 cup heavy cream
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
Preheat oven to 375.
Prepare a 9x12 baking dish with cooking spray or oil.
Preparing dry ingredients
Slice zucchini and onion into thin slices.
In prepared dish, layer 1/3 of the zucchini and onion, and top with shredded cheese. Sprinkle 1/3 of your salt and pepper on top.
Repeat the above step 2 more times, until all of your zucchini, onion, and cheese are used.
Preparing wet ingredients
Melt butter in microwave safe bowl.
When butter is melted, add heavy cream and garlic powder and stir well.
Pour cream mixture evenly into baking dish, over the prepared zucchini.
Bake uncovered for approximately 45 minutes, or until cheese is browned well on top.
Let cool for 5 minutes before serving.
