Chili Chicken Zucchini Boats – $1.27 per serving

One of the wonderful things about zucchini is that it is an extremely versatile vegetable. It can fit into many different cuisines and flavors, and this recipe is no different. If you are looking for a low carb alternative for tacos, burritos, pasta, or any other type of carb heavy meal, give these zucchini boats a try. They are delicious, healthy, and easy to make.

When baked, zucchini can become a little watery. To make sure your boats don’t get too watery, drain the dish before baking, and drain the water out of the zucchini after you scoop the seeds out.

These are wonderful as is, or choose to top them with sour cream, salsa, guacamole, or (as pictured) queso. I’ll cover that recipe in time, when I perfect my method. This batch turned out pretty good, but it needs some work before I’m ready to share. Be on the lookout!

Chili Chicken Zucchini Boats

Ingredients

  • 2 zucchini
  • 3 boneless skinless chicken breasts
  • 1 bell pepper chopped
  • 1 small onion chopped
  • 4 oz canned green chilis
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp cumin
  • 1/2 cup shredded cheese

Instructions

Preparing filling

  1. In a crock pot, combine chicken, bell pepper, onion, chilis, salt, pepper, and cumin. Cook on high for 4 hours.

  2. Once cooked, transfer chicken, pepper, onion, and chilis to a large bowl. Use two forks to shred chicken.

Preparing zucchini

  1. Preheat oven to 350.

  2. Slice zucchinis in half, longways. Place in a large glass baking dish (two if you need it) sliced edge down. Fill bottom of baking dish with 1/2 inch of water.

  3. Bake for 35-45 minutes or until zucchini is soft. Remove zucchini from pan and drain water from pan.

  4. Use a large spoon to scoop out seeds and center of zucchini, about 1 inch deep.

Assembling boats

  1. Scoop shredded chicken mixture into zucchini, until all chicken is used up. 

  2. Top with shredded cheese and continue baking for 10 minutes, or until cheese is sufficiently melted.

  3. Let cool before serving.
