This recipe for chicken enchirridos came from a place of necessity, and also cleaning out my pantry. I am currently on crutches due to an old knee injury flaring up, so I figured the crock pot was the best way to cook a great meal without having to be on my feet too much. These turned out absolutely wonderful!

I have a locally famous enchilada recipe, but did not have all the ingredients handy. Therefore, I decided to improvise. These had the delicious taste of traditional enchiladas, but were much cleaner and able to be eaten with our hands. They also store well and taste just as good – if not better! – the following day.

I normally keep my recipes on the mild side for the kiddos, so know that you can spice this one up by adding different flavors. JalapeƱo, poblano, and chilis would make good options. I used a seasoned Spanish rice package, and just dumped the whole thing in. I was going for simple on this one.

Crock Pot Chicken Enchirridos

A quick and easy, handheld mashup between an enchilada and burrito.

Ingredients

  • 2 boneless skinless chicken breasts
  • 2 bell peppers chopped
  • 1 onion chopped
  • 4 Roma tomatoes chopped
  • 2 cups Spanish rice
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 10 oz enchilada sauce
  • 1 cup shredded cheese
  • 8 burrito size tortillas

Instructions

  1. In a crock pot, combine chicken, peppers, onion, tomatoes, salt, pepper, cumin, chili powder, and enchilada sauce. Cook on high for 4 hours.

  2. Shred chicken thoroughly and add packet of Spanish rice to crock pot. Continue cooking for 30 minutes or until rice is tender.

  3. Preheat oven to 350. Treat a deep glass dish with oil or cooking spray. Use 2 dishes if you don't have one large enough.

  4. In the burrito tortillas, place a line of shredded cheese in the center. Spoon chicken mixture over cheese. Fold burrito up and place seam down in glass dish. Continue until all tortillas are prepared.

  5. Bake until tortillas are slightly browned on top. Let cool and enjoy!
